The name Bourbon doesn’t refer to whiskey. Instead, it refers to Île Bourbon, the former name of Réunion Island. This island was a French colony named after the ruling House of Bourbon. Bourbon vanilla cultivation is one of the most labour-intensive agricultural processes in the world. Each flower blooms for just one day and must be pollinated by hand. Once harvested, the pods undergo a meticulous curing process. This process takes several months. It involves sun-drying by day. Sweating occurs by night.
