A Slice of Family Comfort

In our family, apple crumble has always been king. I grew up with Mum baking it straight from the cooking apple tree in our garden. That tree was a constant presence. Its branches were heavy with fruit each autumn. Baskets were filled to the brim on the kitchen table. Mum would peel and slice the apples. Soon, the whole house filled with the warm, spiced aroma of cinnamon and sugar. I can still picture the bubbling edges of the crumble. The golden crust was crisping on top. I waited impatiently for it to cool just enough. Then, I could sneak a spoonful. Those flavours — tart apples softened with spice and a buttery topping — are stitched into my childhood.

Love of Blueberries

Blueberries, on the other hand, are one of my personal favourites. I’ve always loved the way they burst with juice — sweet yet a little tart, like tiny jewels of flavour. I knew one day I wanted to bring the two together. So, when I decided to create a bake, I blended Mum’s apple crumble memory with my love of blueberries. The result was something special. Soft apple gives body and texture. Blueberries add bright pops of sweetness. A buttery sponge holds everything together. A crumble topping ties it back to the classic I grew up with. (Blueberries).

What I love most is how versatile it is. Unlike a traditional crumble that you sit down with, this Blueberry–Apple Bake can be sliced and taken on the run. It can be enjoyed with a cup of tea. It can also be dressed up with cream for dessert. Carrying the comfort of the past while fitting perfectly into today’s busy rhythm.

For me, it’s more than just a recipe. It’s a way of keeping Mum’s crumble alive. I add my own twist to make it a new family favourite. (A – ‘Apple baked’).

Equipment

  • 2 mixing Bowls
  • 1 9x12x2 Baking dish
  • 1 Chopping Knife
  • 1 mixing spoon
  • 1 Preheated oven to 175°C / 350°F.

Ingredients
  

For the Cake

  • cups Butter (plus 2 tsp for greasing dish)
  • cups Packed brown sugar
  • 3 each Eggs
  • 2 cups Plain/All-Purpose Flour
  • 1 cup Sour cream
  • 1 tsp Baking soda
  • 1 tsp Ground cinnamon
  • ½ tsp Salt
  • 1 tsp Vanilla extract
  • 1 each Apple (peeled & thinly sliced)
  • ½ cup Fresh blueberries

Crumble Topping

  • ½ cup Packed brown sugar
  • ½ cup Plain/All-Purpose Flour
  • ½ tsp Ground cinnamon
  • 3 tbsp Butter

Instructions
 

Prepare the tin.

  • Grease a baking dish (at least 2 inches deep).
  • Preheat oven to 175°C / 350°F
  • A 9x12x2 inch dish works best.

Make the cake batter.

  • In a mixing bowl, cream butter and brown sugar until fluffy.
  • Add eggs and beat until combined.
  • Add flour and sour cream alternately, mixing gently after each addition.
  • Stir in cinnamon, salt, and vanilla.
  • Fold in apple slices and blueberries.
  • Pour into prepared baking dish.
  • Spread and smooth mix until level

Make the topping

  • In a small bowl, add together brown sugar, flour, cinnamon, and butter.
  • Rub with your fingertips until crumbly.
  • Sprinkle evenly over the cake batter.
  • Try and get the topping as even as possible.

Bake.

  • Place dish on the centre rack of the oven.
  • Bake for 65–70 minutes (check from 45 mins, continue until a skewer comes out clean).

Serve.

  • Allow to cool slightly before slicing. Delicious warm or at room temperature.
