🍜 Pork Noodle Stir-Fry

A fast, savoury pork noodle stir-fry built with soy, Shaoxing wine, and fresh chilli. Clean flavour, high heat, done properly.

Ingredients
  

  • 350 grams pork mince
  • 350 grams egg noodles
  • 3 tsp sesame oil
  • 3 cloves garlic (crushed)
  • 1 thumb ginger (finely chopped)
  • 1 each fresh chili (seeds removed, sliced)
  • 300 grams stir-fry vegetables /carrots/beans/snow peas/bean shoots/broccolini etc.
  • 3 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp cornflour
  • 1 each Splash of water

Instructions
 

1. Soften noodles

  • Cover with boiling water👉 5–10 mins

2. Cook pork

  • Hot pan, sesame oil 👉 Break it up👉 Let it colour

3. Build flavour

  • Add ginger, garlic, chili 👉 Fragrant, quick

4. Add vegetables

  • High heat👉 Keep them moving

5. Build sauce

  • Mix soy, Shaoxing, cornflour, water

6. Combine

  • Add noodles + sauce👉 Toss well

7. Finish

  • Cook until glossy and coated

    That caramelisation = flavour. That’s what most people miss.

    Don’t overload the pan
    High heat = better stir-fry
