Antoine Alciatore was a renowned French-born chef and restaurateur, best known for founding Antoine’s Restaurant in New Orleans in 1840, one of the oldest family-run restaurants in the United States. Alciatore was originally from Marseilles, France, and immigrated to New Orleans, bringing with him the traditions of French cuisine, which he adapted to the local ingredients and culture, helping to shape what is now recognized as Creole cuisine.
Antoine’s quickly gained a reputation for its fine dining and became a landmark in New Orleans. Over the years, it attracted celebrities, politicians, and culinary enthusiasts, solidifying its place in the history of American cuisine.



One of Alciatore’s most famous creations, Eggs Sardou, is a dish featuring poached eggs served on a bed of artichoke bottoms, creamed spinach, and hollandaise sauce. It was named in honour of the French dramatist Victorien Sardou.
Antoine Alciatore’s legacy continued through his descendants, who managed Antoine’s restaurant for generations, preserving its classic dishes while contributing to the evolution of New Orleans’ culinary traditions.
