🌱 WINGED BEANS

Late Night Double Feature is part of Ingredients & Beyond. It’s a place for ingredient stories that sit outside the A–Z. These are quiet, late-night explorations of food origins. They focus on character and craft. They are opened slowly, observed closely, and shared for curiosity rather than instruction.

The plant where nothing goes to waste

Say hello to the winged bean—one of the world’s most underappreciated superfoods. This veggie is native to tropical Asia. It is often called the “goa bean”. This uniquely ridged veggie is entirely edible—pods, leaves, flowers, tubers, and even seeds!

Its crisp, nutty flavour (a cross between green beans and asparagus) makes it perfect for stir-fries and curries. Its nutritional value is outstanding. It is rich in protein, vitamins, iron, and calcium.

🌿 Why it’s a powerhouse

Whole-plant hero: Pods, roots, leaves, seeds, and flowers are all edible and delicious.

Protein-packed: Often compared to soybeans for their high plant-based protein content.

Crunchy and versatile: Stir-fry, steam, boil, or eat raw when young and tender.

Culturally rooted: Common in Filipino, Thai, Vietnamese, and Indian cooking.

Sustainable: Grows easily in tropical climates and enriches the soil as a nitrogen fixer.

Also known as: Goa bean, four-angled bean, princess bean, or kacang botol.

🍽️ How to use Winged Beans

  • Slice raw into salads for crunch and colour 🥗
  • Stir-fry with garlic, chilli, and soy for a quick veggie side 🍜
  • Cook in coconut-based curries or stews for richness 🍛
  • Use leaves like spinach or blend into green sauces 🌿
  • Boil the roots like potatoes and roast the seeds for snacks 🥔
