Ingredients

  • 3 tbsp olive oil
  • 500 gram beef or lamb mince (1Ib)
  • 1 each Onion
  • 2 cloves garlic
  • 100 grams Streaky Bacon (4oz)
  • 2 cups Stock (Chicken/Beef or Vegetable).
  • 100 grams Spinach
  • 100 gram feta cheese, crumbled
  • 2 tbsp balsamic glaze
  • 1 each Stock cube (OXO, Knorr, or Maggi)
  • 1 cup Basmati Rice
  • Salt to taste
  • 1 each Flatbread (pita, wraps, naan, etc.) to serve

Instructions
 

Prep ingredients.

  • Peel and slice onion and garlic.
  • Cut bacon into strips.
  • Mix the mince with crumbled stock cube and balsamic glaze.

Cook base.

  • Heat 2 tbsp olive oil in a large oven-proof pan over medium heat.
  • Add onion, garlic, and a pinch of salt. Cook until softened.
  • Add bacon Cook for 4–5 minutes until browned.
  • Then add the mince cook to browned

Add rice.

  • Stir raw rice into the meat mixture so everything is evenly distributed.

Add stock & simmer

  • Pour in the stock and bring to a boil.
  • Cover the pan, with a lid and reduce heat to the lowest setting.
  • cook for 8 minutes.

Rest & finish.

  • Remove from heat, keep covered, and let rest for 5 minutes.
  • Add spinach, stir through, and let it wilt

Serve.

  • Top with crumbled feta.
  • Serve with warm flatbread of your choice.
