Easy to follow Rolled Oats Bread

Rolled Oats Bread

Rolled oats bread is a soft, nourishing yeast loaf. It is made with rolled oats and a blend of white and wholemeal flour. The oats absorb moisture during fermentation. This process helps the dough stay hydrated. It gives the finished bread a tender crumb with gentle texture. (https://www.theworldofbread.com/).

This is a comforting, everyday loaf designed for practical use. It slices cleanly and toasts beautifully. It works just as well at breakfast as it does for sandwiches. This is proof that simple ingredients can deliver reliable, satisfying bread. (https://kookssecrets.com/2025/12/19/butter-bread/).

Equipment

Ingredients

  • 400 g Bakers flour
  • 100 g Wholemeal flour
  • 20 g Salt
  • 5 g Bread improver
  • 500 ml Water approximately
  • 40 g Yeast
  • 170 g Rolled Oats

Instructions

1️⃣ Mix the dry ingredients

  • Place the bakers flour, Wholemeal flour, salt, and bread improver into a large bowl.
    Mix well to combine evenly.

2️⃣ Add yeast and water

  • Add the yeast, then pour in the water.
Mix until a soft dough forms.

3️⃣ Add the rolled oats

  • Fold the rolled oats into the dough.
    Mix until evenly distributed.
Oats can be added dry — they soften during fermentation.

4️⃣ Knead the dough

  • Turn onto the bench and knead for 8–10 minutes until:
    Smooth
    Elastic
    Soft but not sticky

5️⃣ First rise

  • Place dough into a lightly oiled bowl.
Cover and leave in a warm place for 60–75 minutes, until doubled in size.

6️⃣ Knock back

  • Gently press out the air.
This evens the crumb and improves texture.

7️⃣ Shape

  • Shape into a large loaf or divide into two.
Place into greased tins or onto lined trays.

8️⃣ Second rise

  • Cover and allow to rise for 35–45 minutes, until well risen.

9️⃣ Bake

  • Preheat oven to 210°C (fan 190°C).
    Bake for:
    40–45 minutes (large loaf)
    30–35 minutes (smaller loaves)
    Bread is ready when:
    Golden brown
    Firm crust
    Hollow sound when tapped underneath

🔟 Cool

  • Cool completely on a rack before slicing.
Oat breads slice best once fully cooled.

Ready to use

  • Rolled oats bread is ideal for:
    Toast
    Sandwiches
    Breakfast bread
    Everyday meals

Mark’s bench-side advice

  • Dry crumb? Dough too stiff — add a splash more water next time.
Heavy loaf? Under-proofed — give it time to rise fully.
Loose oats on crust? Brush lightly with water before baking.
Rolled oats bread is about comfort, softness, and reliability — a loaf that works every day.
