🍋 Curd
🍋 Curd: a little jar of sunshine ✨
In culinary terms, curd is a smooth, rich pastry filling or cream. It is made primarily from egg yolks, sugar, and flavourings. The mixture is gently cooked until thick and glossy 🥚🍯. Unlike dairy curds, this type of curd is closer to a custard in technique. It is usually sharper and more vibrant in flavour because of the inclusion of fruit juice or zest.
🇬🇧 The most familiar example is lemon curd, a beloved staple of English baking and teatime culture. Bright, tangy, and buttery, lemon curd is traditionally served with scones, toast, crumpets, and sponge cakes. It’s also used as a filling for tarts, pastries, and layered desserts 🍰☕. Its balance of sweetness and acidity gives it a freshness that cuts through rich pastry beautifully.

🔥 Curds are made by gently heating the mixture until the egg yolks thicken the liquid without scrambling. Butter is often added at the end, giving curd its characteristic silky texture and luxurious mouthfeel 🧈. While lemon remains the classic. Modern curds are made with orange, lime, passionfruit, berries, and other fruits. This expands the idea far beyond its traditional roots 🍊🥭.
🍯 Today, curds are widely available canned or jarred, particularly in Britain. They are also prized as a handmade preparation in professional and home kitchens alike. Their versatility makes them equally suited to rustic baking and refined pastry work.
🍋 Smooth, sharp, and indulgent — curd is sunshine captured in a spoon.
