Equipment

  • 1 Large pot for the pasta
  • 1 Large fry pan
  • 1 medium pot for Broccolini
  • 1 Sieve or Colander
  • 1 Serving spoon
  • 1 Pair of Tongs
  • 1 Cooks knife

Ingredients
  

Main Sauce Ingredients

  • 3 tbsp Olive Oli
  • 1 each Onion
  • 500 gram Pork Sausage (approx 1 Ib) or any flavoured sausage I pack in Australia
  • 4 cloves Garlic
  • 1 cup Crushed Tomato (can or Bottle/Jar)
  • 1 bunch Broccolini
  • 1 cup Stock – (chicken or beef). if using vegetarian sausages use vegetable stock
  • 100 gram butter
  • 1 each Fresh Basil leaves (just a few leaves)
  • 1 tsp Balsamic glaze

Pasta

  • 450 gram Spiral Pasta (about 1 Ib) or any dried pasta

Cheese

  • 100 gram Parmesan cheese for grating

Seasoning

  • Fresh ground Pepper
  • Sea Salt flakes to taste
  • 1 each Stock cube (OXO, Maggi, Knorr – any brand)

Instructions
 

Prepare ingredients

  • Slice the onion and garlic
  • cut the stems from the Broccolini and slice thinly
  • cut the broccolini in to small florets
  • cut the sausage in to small pieces 6-8 pieces per sausage

Quick marinade

  • Mix the sausage with the crumbled stock cube and Balsamic glaze
  • leave to stand for 5 minutes

Boil water.

  • Fill a large pot with water for the pasta and bring to a boil. add salt
  • Fill the medium pot add water an some salt with 50 gram of the Butter

Cook Sausage mixture.

  • In a large pan, heat olive oil over medium-high heat.
  • add the onion and garlic and a pinch of salt.
  • Add the Sausage,. Cook until nicely browned (the balsamic helps this) and cooked through (about 5โ€“6 mins).
  • add the sliced broccolini stems stir and continue to cook
  • add the stock simmer
  • When the stock has reduced a little add the crushed tomato turn the heat down and simmer.

Cook the pasta

  • While the sauce is simmering add the pasta to the large pot of boiling water cook for about 6 minutes check for doneness cook longer if needed
  • when past is cooked drain in sieve leave to stand

Cook Broccolini

  • Place to boiling water with he butter and salt cook for 2/3 minutes
  • when done – drain and reserve

Combine and finish sauce .

  • Check the sauce mix season to taste add the remaining 50 gram butter
  • add the pasta to the sausage mix gently mix together
  • add the broccolini gently mix and serve
  • Just before serving tare basil leave add to sauce and stir to mix in.

Serve

  • Split between 4 bowls or plates
  • Grate fresh Parmesan cheese over the top
