Buffalo Currant Jam: The Kook’s Wild Preserve

Equipment

  • 1 Large pot with thick / heavy base
  • 1 digital scales

Ingredients
  

  • 500 grams buffalo currants
  • 400 grams caster sugar
  • 1 tbsp lemon juice (optional)
  • 50 ml water

Instructions
 

1. Prepare fruit

  • Rinse currants and remove any stems.

2. Start cooking

  • Place currants and water in a saucepan.
    Cook gently until fruit softens and releases juice.

3. Add sugar

  • Stir in sugar and dissolve completely.

4. Bring to boil

  • Increase heat and simmer until jam thickens (15–20 mins).
    👉 Stir regularly

5. Test set

  • Place a small amount on a cold plate.
    If it wrinkles when pushed — it’s ready.

6. Jar

  • Pour into sterilised jars while hot and seal.
