- 1 Large pot with thick / heavy base
- 1 digital scales
Ingredients
- 500 grams buffalo currants
- 400 grams caster sugar
- 1 tbsp lemon juice (optional)
- 50 ml water
Instructions
1. Prepare fruit
- Rinse currants and remove any stems.
2. Start cooking
- Place currants and water in a saucepan.Cook gently until fruit softens and releases juice.
3. Add sugar
- Stir in sugar and dissolve completely.
4. Bring to boil
