White Chocolate Mud Cake

A rich but balanced white chocolate mud cake with a softer crumb and controlled sweetness.

Equipment

Ingredients
  

  • 200 grams white chocolate
  • 150 grams butter
  • 180 ml milk
  • 120 grams sugar
  • 2 each eggs
  • 1 tsp vanilla
  • 200 grams flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 each Zest of 1 lemon

Optional White Chocolate Ganache

  • 150 grams white chocolate
  • 75 ml Heavy / Thick / Double Cream

Instructions
 

1. Melt base

  • Gently melt:
    ๐Ÿ‘‰ Cool slightly
    butter
    white chocolate
    milk

2. Mix eggs

  • Whisk eggs + sugar + vanilla until fluffy

3. Combine

  • Add chocolate mix
    ๐Ÿ‘‰ Stir gently

4. Dry ingredients

  • Fold in:
    flour
    baking powder
    salt
    lemon zest

5. Prepare baking tin

  • brush 20 cm cake tin with oil
    line tine with baking paper
    pour cake mix in to tin
    tap tin gently to even mix in the tin

6. Bake

  • ๐Ÿ‘‰ 160ยฐC (low + slow ๐Ÿ‘€)
    ๐Ÿ‘‰ 50โ€“60 mins

7. Rest

  • Cool in tin
    ๐Ÿ‘‰ improves texture

Optional White Chocolate Ganache

  • Heat cream until just hot (not boiling)
    Pour over chocolate
    Let sit 1 minute
    Stir until smooth
    ๐Ÿ‘‰ Cool slightly before spreading on cake
