👨🍳 KOOK’S SECRET
👉 Don’t rush the folding stage.
That air in the egg whites is what creates the sponge layer.
Overmix it—and you lose the magic.
🔥 WHAT’S REALLY HAPPENING
As the cake bakes, the mixture naturally separates.
The lighter, airy batter rises to form a sponge,
while the liquid settles into a soft pudding underneath.
👉 It’s a simple bit of kitchen science—
but it feels like something special.
⚠️ COMMON MISTAKES
❌ Overmixing the egg whites
❌ Skipping the water bath
❌ Overbaking (loses the pudding layer)
👉 Keep it gentle, and trust the process
